Almond Butter Brownies

Voted the Favorite at our house! However this recipe does work well with peanut butter and coconut butter!

Ingredients: 

  • 1 lg egg
  • 1 cup smooth almond butter 
  • 5Tbsp cocoa powder 
  • 6 Tbsp coconut sugar (can substitute for regular sugar)
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract 
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup dark chocolate chips

Directions:

Preheat oven to 350. Line a 9x9 inch pan with parchment paper. In a medium bowl beat egg with a fork, add sugar and maple syrup mix to blend then add almond butter, mix to combine. Finally, add dry ingredients, mix well, adding chocolate chips last. Place batter into prepared pan, spread batter evenly, pressing with your fingers. Bake in oven for 18-20min, checking for doneness at 15, some resistance with a light touch is preferable, over baked brownies are just not as good as a little gooeyness. Place the pan in the fridge to cool. Cut into whatever size pieces you prefer. 

The brownies freeze well and will keep in the refrigerator for approximately 7 days in a sealed container.
