Gluten free fun in the kitchen

Brilliant Berry Scones with white chocolate 

makes 12


  • 3 Cups oat flour 
  • 3 Tbsp coconut or cane sugar
  • 1 1/2 Tbsp milled flax seed
  • 2 1/2 tsp baking powder
  • 1 tsp sea salt 
  • 1/2 tsp baking soda 
  • 1 1/2 sticks (3/4 Cup) cold butter, cut into small chunks 
  • 3/4 Cup white chocolate, cut into small chunks 
  • 1 Cup milk (dairy or alternative) + 1 tsp lemon juice, combine, allowing to curdle 10 min.
  • 1 Cup frozen blueberries/blackberries or raspberries or a combination


Preheat oven to 400. In a medium bowl whisk together the dry ingredients except for the chocolate. Add butter and blend to resemble coarse cornmeal. Add chocolate, blend, gently stir in milk, add berries, stir only to combine. Drop dough in approximately 12 equal parts into parchment lined pan. Bake in oven approximately 12-15 minutes or until golden. Cool on wire rack. 

Best enjoyed warm. They freeze well in an airtight container.
